  7. Ahora para preparar el risotto ponemos en una sartén grande (a ser posible antiadherente) un poco de aceite y echamos el otro diente de ajo cortado en trocitos, la otra mitad de la cebolleta, un poco de pimiento verde y un trocito pequeño de jengibre (al gusto) cortado en trocitos todo
  8. Cuando estén pochadas añadimos las setas y cuando estén rehogadas añadimos los trozos de pollo
  9. A continuación echamos el arroz y lo freímos 3-4 minutos e iniciamos la cocción añadiendo el otro vino de vino blanco y 1-2 cazos de caldo que hemos hecho al principio MUY CALIENTE (casi en ebullición) para no cortar la cocción.
  10. Vamos removiendo sin parar de forma lenta y cuando veamos que se va quedando sin caldo vamos añadiendo otro cazo de caldo y así hasta unos 18-20 minutos (los últimos 5 minutos a fuego lento)
  11. Entonces añadimos media cucharada de mascarpone, mezclamos y unos dados de mantequilla (8-10) y vamos cremando el arroz y removiéndolo lentamente. Cuando esté meloso incorporamos el queso rallado y lo mezclamos para que se funda y ya esta
  12. Ahora lo emplatamos y añadimos las patatas por encima para dar ese toque crujiente.
