Este finde para el reto, toca cocinar una de mis recetas preferidas, y aunque últimamente se cocina mucho la "fideuà" de pato y foie, yo haciendo honor al maravilloso Mediterráneo, hago la de toda la vida... la de pescado y marisco.
La fideuà es un plato originario de Gandía, que se elabora de forma parecida a la paella. Sus ingredientes principales son: fideos gruesos de pasta, caldo de morralla, rape u otro pescado de carne consistente, y mariscos, como sepia y gambas o gambones. Se puede aderezar con alioli, aunque personalmente, yo no lo hago nunca para no restar sabor al pescado.

- 160 gr. sepia
- 250 gr. rape
- 12 gamba roja alistada

- Dejar hervir a fuego lento 5 minutos, y añadir los fideos. Cuando lleve unos minutos hirviendo, rectificar de sal.
- Antes de que se consuma el caldo, colocar las gambas, y cuando se haya consumido, apagar el fuego y tapar con papel de aluminio. Dejar reposar 5 minutos.
