  2. Cuando tengamos las costillas doradas le ponemos agua, el laurel, los ajos y un trozo cebolla y a cocer hasta que estén tiernas. Al caldo le ponemos sal y el colorante.
  3. V los dos ajos picaditos y por último el tomate rallado. Cuando esté el sofrito lo sacamos y trituramos y en ese aceite echamos los fideos.
  4. En la paellera vamos a hacer el sofrito. Ponemos aceite de oliva y los pimientos a trocitos y la cebolla y vamos pochando.
  5. Si necesita caldo vamos añadiendo. Cuando estén, apagamos y dejamos reposar unos 5 minutos.
  6. Cuando estén un poco dorados los fideos añadimos el sofrito triturado con un poco de caldo de las costillas, las longanizas reservadas y las costillas que habremos sacado del calso.Rehogamos todo y le ponemos el caldo colado de cocer las costillas.
  7. Dejamos cocer los fideos los minutos que nos ponga en el paquete y vamos probando de sal para ver el punto.
