  1. Preparamos todos los ingredientes para que estén listos y los reservamos: limpiamos los mejillones, colocamos las gambas, trituramos el tomate, picamos la cebolla y el ajo, preparamos AOVE, el azafrán, el pimentón, cortamos la sepia en trocitos, medimos los fideos y el caldo.
  2. Calentamos AOVE en nuestra paellera, añadimos los mejillones y las gambas y los doramos vuelta y vuelta. Reservamos.
  3. En el mismo aceite añadimos la cebolla y el ajo y lo pochamos un poquito. Después añadimos la sepia y lo cocinamos juntos. Yo lo tapé un rato para que se hiciera bien. Después destapas y si cocinas un poco más para que no haya agua
  4. Hacemos un huequito en la paellera, ponemos las hebras de azafrán y le damos unas vueltas para que se dore, añadimos el pimentón, mezclamos y ponemos rápidamente en tomate para que el pimentón no se queme.
    Cocinamos hasta que se consuma el agua del tomate y coja textura.
  5. Ahora es el turno de los fideos. Los añadimos a la paellera, mezclamos y los doramos un par de minutos. Añadimos el caaldo de pescado y e intentamos repartir bien todos los fideos por la paellera.
  6. Lo llevamos a ebullición y cocinamos durante 9 minutos (si los fideos no son integrales quizá en 7 minutos esté) Antes de que se consuma el caldo colocamos los mejillones y las gambas.
  7. Si te apetece hacer ali oli este sería un buen momento.
    Cuando estén listos apaga el fuego, retira la pellera del calor y dégalo reposar diez minutillos.
