Consiste en tomar una cantidad con la cuchara, hacer movimientos como si se estuviera enrollando, una vez que se encuentre cubierta la cuchara, contar hasta 5 y si durante ese tiempo no cae ninguna gota, el sabayón se encuentra listo.
    Dejar enfriar y reservar
  3. En otro recipiente, montar la nata hasta punto de listón y añadir el azúcar. Batir durante 5 minutos más y agregar el queso crema. Batir por 5 minutos más y añadir el sabayón frío. Mezclar hasta obtener homogeneidad.
  4. Preparar el café para remojar las galletas.
    Remojar las galletas en el café y colocar una primer capa de ellas en el refractario o molde.
    Colocar posteriormente una capa de crema, y así sucesivamente.
    Al llegar a la capa final, espolvorear chocolate rallado.
    Refrigerar durante 3 horas y estará listo para consumir.
