  1. Recalentar el horno a 180°
  2. Para preparar la masa, mezclamos en un recipiente la harina de almendras, la harina de coco y el polvo para hornear.
  3. Derretir la mantequilla en el micro sacamos, agregar los 60ml de nata para montar, los 50 ml de claras y el eritritol. Removemos hasta que estén todos los ingredientes incorporados.
  4. Incorporar la mezcla de la mantequilla a los ingredientes secos sin dejar de batir. Finalmente añadimos los 40ml restante de Nata
  5. Llevar la mezcla a un molde rectangular con papel vegetal. Hornear durante 35 minutos.
  6. Pasados 35 minutos retiramos y reservamos.
  7. Mientras tanto. Disolvemos dos cucharas de café en 75 ml de agua y reservamos.
  8. Batir la nata hasta que forme picos suaves. En otro recipiente batir el queso con el eritritol. Integral ambas mezclas con movimientos envolventes
  9. Verter el café en un plato hondo. Cortar el bizcocho en bastoncillos y sumergirlos en el café.
  10. Formamos la primera capa en un envase, (en mi caso lo voy a poner en el molde donde he horneado la masa como es metal se enfría más rápido en la nevera). Sobre esta, formar una capa de crema mascarpone.
  11. Formamos otra capa. Decoramos con el cacao en polvo y llevamos al refrigerador durante una hora y media.
  12. Servimos y disfrutamos
