Pasamos la panceta y el lacón por el grifo de agua fría, para desalarlos, ponemos al fuego las fabes y todo lo demás con agua fría, hasta cubrirlas, (solo cubrir las fabes) echamos un chorro de aceite.Cuando empiece a hervir, quitamos la espuma que se forma, entonces bajamos el fuego, para que la cocción no sea muy agresiva, porque se romperían las fabes
  3. A fuego bajo y según el tipo de fabes las dejamos cocer entre 2 horas a dos horas y media, cuando faltan aproximadamente 15 minutos añadimos el azafrán. Para la presentación, sacamos el "compango" y lo ponemos en una bandeja y las fabes en una sopera o plato...
