- Bizcocho soletilla
- 3 huevos
- 90 g harina de repostería
- 75 g azúcar
- 1 pizca sal
- 200 g café fuerte
- 50 g amaretto (sustituible por ron)
- Crema
- 400 g queso mascarpone
- 200 g nata para montar (más de 35% de materia grasa)
- 3 yemas de huevo
- 100 g azúcar
- Unas gotas de aroma de vainilla
- 3 claras de huevo
- 1 cuchara azúcar
- 1 pizca sal
- Cacao en poco puro para espolvorear
Steps to make to make Tiramisú
- Empezamos con la plancha de bizcocho soletilla: separar las claras de las yemas de los huevos. Montar las claras con una pizca de sal con una batidora de varillas. En mitad de este proceso, incorporar el azúcar normal poco a poco.
- Batir las yemas aparte e incorporarlas al merengue anterior, con la ayuda de una espátula y con movimientos envolventes.
- Tamizar la harina e incorporarla de dos o tres veces. Integrar la mezcla con la espátula, hasta que sea homogénea.
- Forrar una bandeja (30x40cm) del horno con papel de hornear. Echar la masa y extenderla bien por todas las esquinas, moviendo la bandeja de un lado para otro.
Precalentar el horno a 180ºC, calor arriba y abajo.
Hornear unos 12 minutos (aprox, dependiendo del horno será algún minuto más o menos).
Sacar la plancha del horno y dejar reposar en una rejilla hasta que esté fría. - Hacer un café muy fuerte, dejar enfríar y añadirle el licor.
- Preparamos la crema: Poner en un bol el queso mascarpone y la nata y montar con las varillas hasta que esté duro. Reservar en el frigorífico.
- Separar las claras de las yemas. Poner en un bol de cristal las yemas, junto con los 100 gr de azúcar y unas gotas de esencia de vainilla. Poner este bol dentro de una cacerola con 2/5 agua y tenerlo al fuego unos 8 minutos, dándole vueltas de vez en cuando. Pasado este tiempo retirar el bol y dejarlo enfriar.
- Montar en otro bol las claras, con la cucharada de azúcar y la sal.
Mezclar la crema de mascarpone y nata con las yemas. Añadir las claras montadas y mezclar con movimientos envolventes, hasta obtener una crema homogénea. - Por último montamos el postre, en raciones individuales o en una fuente: colocar en la base una capa de bizcocho, mojar con un pincel en el café con el licor e ir empapandolo. Colocaremos un poco de crema, espolvorear cacao en polvo con un colador por encima de la crema y repetimos para la segunda capa. Dejamos reposar en la nevera varias horas, mejor de un día para otro.
